Feeding the Fall Foodie!

It is green chile time in New Mexico and that means every dish has green chile in it, am I right? From eggs to enchiladas to raw on a tortilla (I can't be the only one that does this... can I?) we have green chile morning, noon and night. Choosing a wine can be tricky, but I suggest our Gruner Veltliner with its round, ripe fruit and bright herbal notes. If you like sweeter wines, a fruity Riesling is fantastic to use with these dishes, especially if you like the really hot stuff. Our Riesling is super dry yet showcases nice ripe fruit giving you the best of both worlds!

Garden goodies are also starting to come in which gives us delicious tomatoes, corn and zucchini, all of which are fabulous with a little olive oil, salt and pepper paired with our Rose of Petit Verdot or Rose of Sangiovese. If you like to get creative with your veggies and add cheese or breading, our fuller bodied Rose of Cab is ideal for those pairings!

As you start to get into the cold weather meals, carne adovada, stews and yummy baked bread things, we can start looking at our reds. As a rule of thumb, you want to use lighter bodied wines with lighter foods and build up body and intensity of the wine you choose as the food you are pairing it with becomes more robust. Seasonal breads freshly baked and dipped in stew or a red chile tamale are delicious with our Sangiovese, while carne adovada or some other bold dish is going to shine with our Aglianico.

Fall is also the perfect time for pie! The apples have come in, pumpkins are readily available and as a nortena, it is prune pie season! Now I recommend adding herbs to the crust (thyme and rosemary) to the crust of the apple pie, cutting way back on the sugar and adding a slice of cheddar cheese to the top for an unbelievable tasting experience. The you pair that with our Chardonnay. Pumpkin is yummy with our Cab Franc and prune pie is out of this world with our Merlot.
